Gaming pc for $2500?
The main reason im asking this question is to get ppls opinions on all the parts. I know quite a bit about pc hardware so dont be afraid to get technical 
.
Anyway as far as I know Quad cores are still not worth the money as most software/games are only suited to 1/2 cpu's, so im probably looking for a core 2 duo around 2.66, im debating between getting 1 really good graphics card and then adding another later on or geting 2 average ones now, so please let me know what you think. I do plan to install the 64bit version of xp aswell.
In terms of ram im looking at 800mhz as it is really cheap and 1066+ doesnt seem to provide any significant performance increase considering its 2x the price. for a HDD im looking between 76GB - 150Gb, those are the two raptor sizes I believe. I remember seagate use to produce one called Cheetah at 12000rpm or 15000, please tell me if you know whats happening with that. I also wanted to get water cooling with the case and a good monitor 17+".
Why do you need raptors dude? Get a nice 7200Rpm Seagate hardrive anything above 250gb is perfect.
GPU: I say, go all out on the GPU. Think about it what ever gpu you get now it will be a whole lot cheaper in say 3 to 6 months and even cheaper after a year. A LOT CHEAPER. SO Go all out on the GPU aka get the best one you can afford. Otherwise if you get a ok so so card it will be out dated faster than a nicer one. Do what your gut tells you though, there are def some good gpu's that are under 280 or so.
Yea, def go with 4gb of 800mhz ram because you have 64 bit OS. It will fully utilize the 4gb of ram. 800 is plenty fast...for now!
What you said for the CPU sounds perfecto!
IF you get four sticks of ram and two GPUs then def get the water cooling. That's worth it.
Get the 22 inch Samsung Sync master. I have it and its a beauty. Or the LG I forgot the name. But, it is also very nice looking.
What about the motherboard?

2500 for all that is not worth it. You can build a sick ace computer for 1600 i mean sick! Check out tigerdirect, or newegg.com for parts. Tigerdirect my favorite.
